Birthday Cake Blondies (GF, DF)
Blondies do not get enough hype! Seriously, why is everyone making brownies when they could enjoy the brown sugar and vanilla flavors in blondies? Anyway, these treats are extra special because they are gluten sensitive, dairy-free, and have rainbow sprinkles!
About These Blondies
This recipe isn’t just any old blondie recipe. These are minimally processed and use honey and almond flour instead of traditional flour and sugar. My birthday cake blondies are like chocolate chip bars with sprinkles and as a bonus, they are semi-healthy!
How to Make
Ingredients - Almond flour | baking soda | baking powder | salt | vegetable oil or coconut oil | almond butter | honey | vanilla extract | non-dairy milk | rainbow sprinkles | chocolate chips
A quick rundown - To make these blondies, separate the wet and dry ingredients. After you have mixed the wet ingredients, stir in the dry ingredients. Then, fold in the sprinkles and chocolate chips. Bake for 20-30 minutes or until golden brown.
Tips + Substitutions
As you might have noticed, the baking time has a larger range. When using honey, baked goods take longer to set in the oven. You can substitute brown sugar and the baking time will be shorter (most likely between 20-25 minutes). Whereas, using honey will take close to 30 minutes. To make this vegan, opt for brown sugar.
I can’t recommend a different flour because I’ve only tested it with almond flour. You might be able to get away with oat flour, but I would not try plain flour because the textures are not similar.
Vegetable oil and coconut oil can be used interchangeably in this recipe. Peanut butter can replace almond butter, but it will be more like a peanut butter bar (which is still tasty)! The blondie batter will be thicker and will be similar to cookie dough. If the batter is too crumbly and unable to be cohesive, another tablespoon of milk should be included.

Method:
Preheat your oven to 350 degrees Fahrenheit and grease a loaf pan.
To start, mix the dry ingredients - the almond flour, salt, baking soda, and baking powder.
In another bowl, mix the wet ingredients. Stir until the almond butter, vegetable oil, honey, vanilla extract, and milk are a cohesive mixture. Pour the dry mixture into the wet mixture. Then, fold in the sprinkles and chocolate chips.
Spread the blondie batter into the greased pan. Bake for 20-30 minutes or until golden brown. Check after 20 minutes and go from there.
Notes:
The blondies will be soft in the middle but not mushy.
